This is an assumption, but I don't think it's every day that anyone makes potato pancakes. Last night I had a hankerin' for potato pancakes, found
this recipe. Like some of the comments, it says the recipe is a little too watery, so I added a little more flour to make it more of the consistency of... well, pancake batter. This ended up being a very wise idea.
It was delicious, vegan, topped with my homemade applesauce, and by no means a well balanced meal. We all need some junkfood sometimes.
