--1 watt led vs 5 watt luxeon --

Will 5 1watt leds be the same as one 5watt luxeon?

They will use the same wattage (I guess), but will the intensity and "quality" of the light be the same?

I am trying to build an LED lighting system for my saltwater tank, and I can choose between A BUNCH of 1 watt little 5mm leds or 5-6 single 5watt luxeon leds... ?

The wattage doesn't tell you that. You need to compare the luminous flux (lumens), which will be the same only if the LEDs are equally efficient.
