I often make bagels and let them rise in the refrigerator over night. Might get too yeasty or too gluteny for bread though. My theory is: it will rise no mater what the temp, just take a bit longer

I agree completely. I made pizza dough yesterday but didn't use it, so I punched it down and put it in the fridge for today's dinner. I rises still, but much more slowly, and it gets more plasticity from gluten. Good for tossing.
