Only real issue is getting it on and off. There has to be an elegant solution to do this... I was thinking of some folding wheels or something.

I'd consider this style. They extend outward and down for a broad base. One with a single wheel, or two for four legs.

Nice! What I'm thinking is something along the lines of .242 drag in the pictures. Probably no greater than 4' extension as to keep it maneuverable/easy to park.
I did read up on Bamzippow's post... very interesting stuff. I don't think a single wheel is what I want to do for a variety of reasons. Notably, I want to keep this thing light enough to remove easily for parking/unloading.

Maybe a hinged arrangement is best. But then no storage for the pimp bike....

I actually have a set of those load jacks on the old popup I could steal for this. Maybe even put a heavy duty caster wheel on each to aid in hitching/unhitching.

Split the 4ft boat tail into two halves. Put big hinges on your frame's rear corners.

Latch the two together, and the four caster wheels let it roll sideways. Unlatched and the two swing out over 90° until they make a flat face 14ft wide. Each of the three pieces could have a shelf up to 4ft wide that folds down to make a platform.

If you make the boat tail swappable you could have more than one. One could be a 3x5ft half-bath with composting toilet.

This is easy when you don't have to actually build it.

Well now... that's an idea! Options are endless, really.
I already have a solution for the toilet, though. It's called the Bumper Dumper. Hence the need to remove this from the receiver:
Off-Road Commode Hitch Receiver-Mounted Toilet Seat | eBay

Good news is, the old man already picked one up for me last Christmas.

Chapter 11.
I've been sick so progress has been slowed. Finally feeling good enough to work again, so I'll have a new installment in a weekish.

Lookin' good, Ben. Are you going over the exterior Luan with anything other than paint?

Thanks all!
Yes, I'm going over the outside with what's called Trim Coil.
It's a reasonably thick aluminum roll 2' wide by 50' long. It's PVC coated. It's super easy to bend and retain it's shape. You can bend it past 90 degrees and the PVC stays intact. I'll do the joints and fastener heads with marine adhesive.
