Good site! See the Genesis G1 (Burgman 650) by Ian Pergram under Scanned Magazine Articles/Artists Impressions for an example of a body shell with a negative angle of attack. The black belt line is the chord of the foil and for a motor vehicle the airflow is usually parallel to the ground. The angle of attack is defined as the angle between the chord and the airflow with nose down being negative.
The main article suggested a seat height of 18 in. but you will need to check your local laws for two and three wheel motorcycles. Here in the States it usually is a minimum of 27 in. for two wheelers and 20 in. for a trike. Clear canopies are popular until you get cooked on a sunny day. Use a solar blocking coating or a light color paint on top. Again check for any window tint laws.
