In greatly overpowered cars like say a 1965 Mustang GTwith a 271 HP 289 in a 2500 pound car with a 4 speed, I can see skip shifting. I do it in the Ranger, but I'm not sure if 3rd to 5th saves gas. I just get it into 5TH at 40 (Ranger).

Shifting causes all the engine's momentum to be lost, only to be brought right back up again as accelerating-that takes fuel. On carb'd stuff the sudden closure of the throttle can cause the mix to go rich- that is why VW fitted their carb'd cars with vac operated throttle dampers- so the throttle would gradually close and not cause an emissions spike. It is easy to skip shift and still remain in the BSFC sweet zone; usually there are just more gears than needed. More gears are nice for very heavy loads and steep hills but the rest of the time are not needed.

So, one of the bigger problems you face is the lack of timely feedback.
No fuel gauge & no fuel consumption display.
How can you address that? That's where I'd be focusing my attention. I suspect if you had regular feedback, that alone would influence your riding style.
As it is, you're stuck going tank by tank.

How about a fluid flow sensor out of the tank and a speed sensor on a wheel. Hooked up to an Arduino with fancy calculations to calculate mpg. I say it's doable if you can find such a sensor. |

I'm talking about a fuel flow sensor. One that would measure volume of flow per minute (mm3/min or whatever) and spit out a 0-5V value.
But I do like that level gauge you linked to.  |
