How do I install a light above the kitchen sink?

I have shared this guy before, but climbing into the ceiling to wire one LED light seems a bit much. I believe that the last time that I looked into this I determined that I need to replace the disposal switch next to the sink with a box with an extra gang, run the wires through into the ceiling, and install the light there.

I don't know when I will work on this. I have too many projects! I would like to figure out the right way to do this first, though.

I have shared this guy's videos before. Generally I like them:This looks decent, too, but 8' ceilings are definitely more difficult to work on than 7' ones!

What do you guys think?

I've got better videos to watch. Staple the wires to the ceiling and paint them to match.

My grandparents kitchen had individual wires in porcelain brackets on their kitchen ceiling.

You could add a 2 in 1 dual switch on the disposal side then run a wire up to where the light would plug in using the same stud cavity and add an "old work" box, socket, and cover. Takes me about an hour, done it many times.
