I am planning to use an iPad Mini for my custom built reverse-trike EV car.
Has anyone had any experience with this?

No, but googling "car dashboard app ipad" might help.

You get mostly games.

I saw an episode of something like "pimp my ride" or some such show where they mounted an iPad onto the dashboard... did a really nice job of it.

You dont have to use an ipad, you can use a nexus or droid tablet with a odb2 dongle and app. Then you got other apps like maps, music and such.
