Hmmm, lets see. Assume I'm using 50 of the 120AH cells. That should give me ~25kW max continuous and ~50kW pulse with ~50 miles of range in a compact car.

Hey, no assuming!

We have (at least!) 3 perfectly good cars to use as real-world data sources!

Mine is 72V system.
6x100ah lead acid gel batteries.
20 HP motor and gets a 20 mile range!

maximum power draw is 400 amps at 72 volts

What kinda voltage sag are you looking at Ben? That's ~29kW peak assuming the batteries stay at 72V, and even w/ losses you should be 25-30hp unless you get some serious drop.
