What does granny shifting mean? And how is it done?

Also how does double clutching work?

granny shifting is for non-rice that can, ie tractor trailers, most v8s with tall gears and manuals, boxer engine driven cars. The rest invented the words "granny shift", because they need a coked up action manic lunacy to get the screaming failure to move, and stay benefical on short onramps to reality.
