In a Prius, gearing is nearly irrelevant since it uses an orbital gear system rather than fixed gears. Aside from your odometer and speedometer being off, the transmission will compensate for the difference in tire size, and the engine won't turn any faster or slower. Or rather, the only change to engine speed would be a slightly higher RPM due to increased load from higher rolling resistance.
