Theory of the petrol engine

For the near future I can change the engine capacity of the Burgman. Three different strokes and three differernt bores can be inter exchanged in a 400 bloc.
Stroke 60mm of the 250CC with bore 73mm , stroke 71.2 mm of the 385CC bore 83 or stroke 77.6 mm of the 400CC with bore 81mm. Which would give the best result?
Assume the the gearing ratio if free.(I have my own gear cutter for that.)
