Two books that I particularly recommend for a painless and though education are "Structures" or either of J.E. Gordon's other books, and "How to make you car handle" by Fred Puhn. To get good range from an electric car, good, light structure is very helpful, but aerodynamics are key. A lot of the advice you see is for racing downforce, not efficiency, but this is a good place to browse for good tips. It is hard to come up with a set of plug-compatible parts for a complete novel vehicle, but a reliable electric power train is pretty easy for a dealer to specify and obtain.
