It's probably safer to eat than conventional meat. No worries about fecal contamination during slaughter, and since you don't have to feed it as much, it doesn't have as much of a chance to pick up heavy metals and other toxins during its journey from being a single cell to being on your table.

Furthermore, if the vat can be made easy to run, you could have a meat culture at home. You can't beat the freshness of freshly harvested meat culture.

Another advantage: They could grow pure myocyte, no fat, no nerves, no connective tissue. Mmm... homogenous.
