Will 80 lbs in a 50 lb tire decrease my payload capacity? I wouldn't think so.

I normally carry 2,500-5,000 lbs. I am running load range C tires because that is what came on it. The tires on the truck are not new. I was told a while back that the steel belts in new tires are not all exactly the same length and need to be driven a while to even out tension before loading the tire to full capacity.
