What tires for s10?

I have a 1995 s10 2wd. currently I have 235/65/15 up front and 265/60/15 out back. They are AT tires and killed me 2mpg over the skinny snow tires. I don't want to run 205's as I like my corners, but I'm thinking taller and harder. Anybody have ideas as to how big I can fit under this thing in stock trim. The speedo currently doesn't work so oversize doesn't bother me. I'm wondering what size should be a good balance between tall and skinny and the fat hogs that killed my mileage that are currently on there. Also what brands and lines offer a lrr light truck tire that i can inflate to 44psi or more? any and all help would be greatly appreciated.
