There are two wires that control the electric AC clutch. Splice an appropriatly heavy switch into one of them. Mount this switch in the cabin. It should allow you to turn it off when you don't want it on.

My dad had a compressor lock up in an old truck. He just unplugged the electrical connector on the compressor.
