I am lazy and use electric mauser to draw the cirle. You get the center point straight from the drawing. Other solution is to use mauser if you already have ready pizza pan. Just measure the diameter and put value of the radius to mauser. make three arches and you have your center point. Works already with two but three makes it more accurate.

I got my electric 300mm mauser for 25€ on sale .
