I'm confused by your question, what is wrong with a 3,000 watt hub motor? or even a 1,000 watt hub motor? what you have came with a 600 watt motor and it burned up so it sounds like you were working it to hard.
does it need to be a DC motor or a 3 phase motor? if you could I would say to go with something like the Phoenix racer from ElectricRider.com it's a 72v 3 phase hub motor that can handle I think up to 40 amps so close to 3,000 amps, or plenty of power for your needs, I have one on my electric bicycle running at 33 volts and am very happy with it.
