High-MPG hot rod

Hey,
I like old cars. I want to build something for high-MPG and low emissions. I've gotta '61 Ford Ranchero project, and a '61 Mercury Comet that has a turbo 4-banger and runs on propane.

I'm trying to decide if I will build the Ranchero as is, or heavily modify it into a single-seater. I just got an early-70's Pinto "Kent" crossflow 1600 cc engine. I'm also interested in the Toyota 2TC (1600 cc) engine.
