Rpms and leisurely acceleration combined with long glides indicate a small car to me. Not many of those are going to get 63 mpg averaging 55 mph. I also see high gph at idle. I'll guess Honda CR-Z, but it could be anything in the 1.5-2 liter class, having a good run on the terrain driven.
Bigger engines like a Mustang's usually turn low (<1800) rpms @ 60 mph.
