I am actually about to start the Mother Earth News hybrid car project with an izuzu pickup, which I think will be pretty easy, but those won't fit your needs.
Have you considered the 90s Ford Taurus wagon? It may not be cool enough, but it has tons of interior room as well as mechanical room.
