This is my approach as my pulses are not good uphill, no turbo these days
so I try and take a run at it on the flat and then hold the MPG at a minimum target and only increase it if I hit my minimum speed.

If you want a cheap camera those chinese $20 handheld ones with a 4 or 8GB micro SD card work reasonably well - loads on ebay. An alternative is to use your phone video camera with a windscreen mount or mount it on the headrest poles, or the headrest itself although it shakes a lot like this.
EDIT - Or you could just wave it around like Vekke....
