I used to do that in 2nd or 3rd, but I find it easier to just use the brakes with the engine off. It's not steep enough to overheat the brakes. I do eventually lose the vacuum assist, but it's not a problem on the Civic. Some vehicles might be dangerous without assist. I do have to be careful not to lock the brakes when I bump start it while braking.
