Maybe someone could use this controller for a grill-block-gizmo:

I agree that best place for temperature measurement is radiator return line. Example if normally radiator drops temperature from 90 C to 70 C then you set threshold to around:
if temp higher than 75 then open grill, shut grill if lower than 70
