Two words: Cruise Control.
Here's a trip we took last weekend, 288 miles round trip, cruise control set at 65mph the whole way. The southern half is pretty hilly, but northern half is almost flat. Built-in gauge showed 40.3 mpg, miles divided by gallons was 40.38 mpg. I think on pure flat roads, using cruise control at 65 mph would yield 45+ mpg.
