There will be no negative effects as long as the temperature stays in the normal ranges. Since W123s have "real" temperature gauges (not "buffered" pseudo-gauges like many new cars), you will be able to monitor the water temp.

Unfortunately, there's no oil temp gauge. This is a problem if you block off the grille, because the oil cooler isn't covered by the fan shroud. This means that the oil cooler will be a path of low resistance and the fan will draw the air through the radiator via backflow through the oil cooler, possibly screwing up the cooling for both.

I've installed a stock water temp sender in the oil pan on my 300td and have run an SPDT switch so I can read both temperatures on the same gauge (but obviously not at the same time). I've got another stock gauge and am trying to figure out how to hack it into the cluster.
