It's no big deal...you buy a pack of pots at radioshack for not much...you find a wiring diagram for your car...you connect where needed...run the wires inside thru the pot...adjust as you drive. You WILL need a Scangauge or other mpg meter to assist with adjustment. Will you see an mpg gain? Beats me. Other sensors can also be adjusted.

Can you do damage? Possible if you aren't careful? If you adjust for best mpg...probably not....
