Hi,
I personally have not seen a point to add bigger screen - you see 4 values in one screen and you just flip between screens to see other values.
If this larger screen has standard 16 pin interface on top of it, then it probably works, but it needs code changes to put 8 values to one screen.

There is also few pics about enclosures I made from plywood.
Front panel is made from CD enclosure - masked screen area with electrical tape, then spray-painted enclosure. After that removed tape and voila! Now there is transparent LCD window without cutting rectangulat hole to plywood.




I also have some green displays available.
