So it can run the tac based off of the amp meter style pickup that goes around one of the motor cables??? I know that motors draw current in pulses but never thought that you could get an inductive pickup that was sensitive enough.

For your temp gauge it seems like a resister in parallel should allow you to fine tune it.
I also suspect that other thermoresister temperature pickups should work, say from a remote thermometer, so you might be able to find a smaller pickup that you could get deeper in to the motor.
On my C-Car I'm planing to mount a 1/16" thermal couple drilled and epoxied in to one of the brushes seeing as how they are one of the most sensitive parts to getting hot and heat up fastest.
