this is very correct

"Mech" is very correct
DO NOT
disconnect the knock sensor (s) if you do the system will never advance ignition timing so as to prevent engine damage from unknown and potentially damaging conditions . there will be no feedback and the system will be in "open loop" as far as ignition timing is concerned
everything will be UN improved
and harmful emissions will increase
as it is
you may find that you have a P0420 after you replace the thermostat
as , you may have suspended certain testing by operating at a lower than specified temperature for a "long" time
a newer system would have set a "coolant MAP" or "time to temp" Fault already .
whatever tests that were suspended by low operating temp will be enabled when the system conditions are present that allow the tests to run
running too "cold" for extended periods makes the cat work harder
be prepared for a "surprise"
change the engine oil too ,either now
or
yesterday.
use dexos1 or ACEA A3 B3 A3 B4 in the correct viscosity for your application
do not use alleged "dino oil" .
there really is no dino oil or fossil fuel but that is another topic
