The answer depends on the motor design at the end of the day. You can get an idea of what is too hot by your coolant and oil temps. You don't want the computer to pull timing, and you don't want oil temps over 220-230*F. That is right around the temps that oil stops doing it's job and you can see engine damage. Also you don't want your coolant boiling,as it stops doing it's job of cooling. To fight that you can get a high pressure rad cap to help with this, but there are downsides too (more leaks could pop up on an old system).
