You asked, and you already could know the answer by the photo.
The installation was a roof over an EV parking spot, I bet it is dimensioned quite well for that.
The gallons were a joke of course, just a measure of cost. Not all of the funding needed to build that installation goes into energy. Building the cells etc. would need way less energy than 2000 gallons would provide.
It cannot need more or it would be more expensive...
The solar cells will still be there when the gallons are long gone though.
