Anything is possible, of course, but there would be lots to it. The manual is lean burn and the CVT is not. Different ECU and associated harness (?), extra catalytic converter for lean burn (?), clutch pedal, etc, etc. Different axles (?). Motor/trans mounts (?). Not to mention trying to find that specific transmission. In 99.9% of cases, it's cheaper to just get the manual version, even if you are having to sell an auto version car at a loss to get the manual. Unless you can find a wrecked manual car and steal parts.
There are exceptions, like when the car was never available with a manual. My buddy did a BMW 850i, only available with an auto. THAT was a cool car with a manual.
