Yah, welding custom mounts on a bike isn't terribly hard, especially at 125cc power levels. Check the basics first, like which side the sprocket is on, and if you can find a sprocket that fits the 250 chain.

If you are referring to the one cylinder 250, it likely has better peak bsfc than the 125, so you would probably (i.e. definitely) come out farther ahead just tweaking your driving style and some minor gearing tweaks.
