It's a more complex build with the fenders and rear bumper included; but you should be able to reproduce the top contour with an additional seam. Consider a clip that reaches forward of the hatch opening sufficient to get ahead of where it starts to fall off.

The Hatch top is not far off from the canopy's top on the concept Beetle , I think your right though , add a little roof fill to blend it at the right height, transition. It could be siliconed in place and left on the roof, The hinges swing the hatch out and up when it opens, so it clears the roof now.
