Pedestrians can duck. I'd be more concerned with deer, their reaction is to freeze. That is why railroad locomotives have the sweeping headlight. Sheep are kid sized (ha!). God forbid you should hit a bull.
What I learned on my last road trip: Kangaroo Rats go 'tick', squirrels go 'tock' and rabbits go 'thump'. They're either suicidal, or think they own the road.
