Another vote for throttle cables, or even better, rods. Electronics can do a lot, but sometimes there's no substitute for that direct physical link. When you have to modify the new stuff so that it feels as good as the old stuff, something is dead wrong. That goes for the electric power steering and steer-by-wire stuff too.
