Let's do some math. The speed limit is 65 the whole way, and Cow decides to do 55 or 60. 800 miles would be ~13.5 hours with no stops. As for highest top speed, Cow would be able to maintain top speed of about 120(?) for significantly longer than Striker's (assumed) top speed of 145(?). I think it's safe to assume that Cow could probably maintain top speed the whole time while Striker does 60 and still get there faster using less gas (maybe, my car does 8 MPG floored at 72, not sure how the Insight does).
