Not likely that the matrix would break down any time soon with most of the modern epoxies, though some are more susceptible to UV degradation. The thing to do then would probably be to encapsulate the CF between other layers of materials (ie; FG, Kevlar, wood, etc.) and protect the material from UV exposure. Paint helps, but there are some that have UV inhibitors which is better but may cost more. One does need to be more careful when cutting and grinding on the stuff.
