If the vent visors allow you to comfortably ventilate the van without using AC,then their drag will probably be overshadowed by the energy savings of not running the compressor.
If your side glass was perfectly flush the visors might perturb the flow more than we'd like.
Any local disruption they cause should be cleaned up by the time the flow reaches the back of the van.I'd be inclined to keep them.
Roof racks would be avoided at all cost.With receiver hitch cargo boxes,there's no compelling reason to use the roof for any storage.
