I bet if we go window shopping and test eating our vegetables, haggle over the price and return some rotten fruit, then the margin would need to be much higher
The margin in the food industry can be small as it is pretty much a constant process with relatively low investment and a quick turnover.
If you add the shops to the calculation the margin needs to be higher. There is a big gap between what the farmers get for their crop and what it retails for in the supermarket.
