So I started slowing down in my car too and now driving that slow is no big deal to me

My exact (in principle) situation. But I do drive faster now, driving for MPG. So in a 60, I used to drive 69, then slowed down to 59-60, now I cruise control at 59, and hold the throttle as far as possible while keeping 35+. This let's me bleed the extra speed on hills, until I get to the minimum. On shorter to medium trips, this yields me 35+ with the engine on, on LONG trips, 40+. I don't think I've ever gone to NC under 45 MPG this way. Last years GGP trip was 47 MPG this way, too, if I remember correctly.
57-59 is a sweet spot for my engine in 6th, so your mileage may vary. Haven't been able to find a BSFC for the engine to explore further, maybe the Acura has one available
