Why not go 3-wheel?
My son and I built an electric race kart (4-wheel) for a competition where some of the entrants were using bicycle wheels on the front of their 3-wheelers. Numerous vehicles folded the wheels under when cornering - and they were not going fast at all - like 15 MPH (we had a slightly different plan, and hit over 60...).
Cycle wheels would be better than bicycle wheels for sure (some had them) but the combination of cornering forces and bumps can generate a fair amount of side-load. Just sayin'.
