I do know that the voltmeter has a potentiometer on the back of it. However, I'm pretty sure that it is for calibration, not brightness.
I'll check out how bright it is before throwing it in the car.

Even if it is not dimmable, you could put a layer or three of window tint film over it to reduce the brightness. You might find a good compromise between day and night readability.
