I see a much bigger difference between auto and manual hyper miling. I had a B4 Passat sedan 5 speed, never did worse then 4L/100km, our mk4 Jetta auto does 5L at best, but usually worse at 5.5. The scangauge shows a difference of 40% when calibrating it between the two cars.
FYI you can get manual steering racks for the mk4 platform out of europe, weight savings, no lines, no pump. Flennor made them (saw them in person in a parts catalogue). I am far more worried about maintenance costs then safety...(turbo spinning down without cool down, clutch and transmission wear, that kind of stuff which over 20+ years of ownership can become issues, we keep our cars forever and rack up a million kms easily on each daily driver unless rust takes over first, which it did on the Passat).
