I'm sure the FOD3184 would be fine. You would want to keep the gate resistor values to around 8 or 10 Ohm I suppose (or larger), but that's not that big of a deal. I just did this approach so I could do like 12amp of gate drive, which allows for 2Ohm gate resistors, which reduces heat loss on very large IGBT half bridge modules.
