The 10-12 degrees applies to flat surfaces (fastbacks), and yes they are easier to build than the curve of the forum's aero-template.

If you can pull off a 3D curved surface, go for it. Many people have done it, more than one way to get there too.

I think the upward slope of the body and floor is half of the top's decline angle.

I did not draw a five degree slope up for the bottom of the tail, should be there though for driveway clearance if nothing else.
