The injector delay value is the amount of time in microseconds, that the injector needs to respond to an injection event coming from the engine computer. This is because the injector pintle has a certain amount of inertia that it must overcome in order to move.
I know of no real easy way to calibrate this value, since it is in microseconds. It was added in to make MPGuino more accurate, and the guy who originally thought it up also wanted to add compensations for temperature and system voltage, but that kind of fell through the cracks.
