I say do it. Seeing the radiator setup, instead of doing just an upper grill block, I would block the center and right (vehicle right, picture left) sections on both the top and bottom. That leaves you the (vehicle) left side open for cooling and what I assume is a transmission cooling line to get air and cooling as well. At your wintertime temps, that will be more than enough to cool the engine down when it finally gets up to thermostat temp.
